Corra Linn is a raw milk, cloth-bound cheddar-style cheese made from the milk of our ewes. The cheese has a firm, crumbly texture and a smooth, sweet, tangy flavour. It is paired with a chardonnay as the acidity cuts through the fatiness of the cheese and cleanses the pallet. Enjoy with fig & sultana toast for an added crunch and add some sweet quince jelly to complement the nuttiness of the cheese for the perfect bite.
