LANARK WHITE was born out of a tecnical dilema.

We have been making Lanark Blue cheese for twenty years from the milk of our ewes, but each year it is very difficult to coax the true blue cheese from the richer autum milk. So in September in the final days of milking, rather the making a blue cheese that would'nt go blue, wwe turned the problem to an advantage by deliberately setting out to make a real, hard white cheese.

This might have proved a poor basis for the succsseful introduction of a new (albeit tarditional-type) cheese to the market. I was apprehensive. But I persuaded to allow a LANARK WHITE to be served with homemade oatcakes at a special birthday celebration. The family reaction to the flavour of the cheese was enthusiastic, and their response encouraed us to offer it to the wider public.

LANARK WHITE is made from raw ewe’s milk and vegetable rennet, and it matures well for six months.
